Beet soup with apples, ginger and coconut milk is a creamy vegetable soup with a vibrant color. Beets, apples, celery stalks, carrots, garlic and ginger are combined with thyme, salt, apple cider vinegar and vegetable broth, then simmered until tender. Once slightly cooled, the soup is blended with unsweetened coconut milk until smooth.

This recipe makes eight servings. For a different number of servings, simply scale the ingredients proportionally.

    Instructions

Tip: tap a step to mark it as done.

    1. Place all the ingredients except the coconut milk in a large pot. Bring to a boil and cook for 10 minutes, or until everything is tender.

    2. Let the soup cool slightly, then blend it with the coconut milk in a blender until smooth.

    3. This recipe makes 8 servings. For fewer or more servings, scale the ingredients proportionally.

Tip: Coarsely grate the beets or cut them into small cubes, as larger pieces will not soften in 10 minutes. Wear gloves when peeling them, as the juice is difficult to wash off your hands and cutting board.
