Winter lentil soup with beets and tomatoes is a creamy vegetable soup with a vibrant color. Grated carrots and beets are cooked with cherry tomatoes, tomato paste, lentils, rolled oats, garlic, basil, caraway and thyme, then blended with an immersion blender. The finished soup is seasoned with butter, honey and salt, which is best added at the end. Serve with a mound of Parmesan, shredded Emmental cheese, sour cream or crème fraîche.

Instructions

Tip: tap a step to mark it as done.

  1. Grate the carrot and beet so they soften during cooking, and place all the ingredients except the butter and honey in a Vitamilk plant-milk maker. Season with crushed caraway and thyme and cook on the oatmeal program. Once the program finishes, run the fruit-chopping program as well to make the soup silky smooth.

Tip: If you do not have this appliance, cook the soup in a pot, then blend with an immersion blender.

  2. Season the soup with butter, honey and salt, and serve with a mound of Parmesan, shredded Emmental cheese, a dollop of sour cream, crème fraîche or a splash of cream. Add the salt only at the end, as its flavor becomes less intense during cooking and you would need to add much more.

Tip: If cooking the soup in a pot, use red lentils, which soften the fastest, and stir frequently—the oats and tomato paste can easily scorch on the bottom.
