Beet soup is a thick, meatless soup made with raw beets and potatoes, especially well known in eastern and northeastern Slovakia. Coarsely grate the beets and briefly cook them with vinegar, which helps the soup retain its deep red color. Unlike borscht, it contains neither meat nor cabbage. Season it with garlic and marjoram, then add a spoonful of sour cream and some dill to each bowl. It is ready in about an hour.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the vegetables

    15 min

Peel and coarsely grate the beets and carrots, preferably wearing gloves because beets stain. Dice the potatoes and finely chop the onion.

  2. Cook the beets

    15 min

Sauté the onion in the oil until softened. Add the beets, carrots, vinegar, and sugar, cover, and cook for 10 minutes. The vinegar helps the soup retain its red color.

  3. Simmer the soup

    25 min

Pour in the water, add the potatoes, bay leaves, salt, and pepper, and simmer for about 20 minutes, until the potatoes are tender.

  4. Season and serve

    5 min

Stir in the pressed garlic and marjoram, remove from the heat, and discard the bay leaves. Serve with a spoonful of sour cream and dill.

Tip: Add the vinegar as soon as you add the beets; without the acidity, the soup will turn brown, and its flavor becomes even fuller the next day. Add ground caraway or horseradish to taste directly to your bowl.
