Bonn vegetable soup is a thick soup made with cabbage, tomatoes, green bell peppers, carrots, celery stalks, and onions, seasoned with ginger, garlic, and coriander. The tomatoes are peeled and pureed, while the other vegetables are covered with cold water and brought to a boil. The onions are sautéed separately in olive oil and added to the soup later. It is a light, meatless soup, ready in about 25 minutes, that serves six.

Instructions
Tip: tap a step to mark it as done.
Finely chop the cabbage and cut the carrots into rounds or half-rounds. Briefly immerse the tomatoes in hot water, then peel and puree them. Cut the bell peppers into strips and dice the onions and celery stalks.
Place all the vegetables except the onions in a pot, cover with cold water, and bring to a boil.
Sauté the onions in olive oil in a skillet until evenly browned.
Add the sautéed onions to the soup along with the spices and salt, and simmer over low heat for 10 minutes. Stir in the chopped herbs, remove the soup from the heat, and let stand for 10–15 minutes.
Tip: Before blanching the tomatoes, cut a small X in the bottom of each one, then plunge them into cold water immediately after removing them from the hot water to make the skins easier to peel.
