Soy-ginger marinated pork tenderloin is tender meat with bold Asian-inspired flavor. Whole tenderloins are marinated in soy sauce, white wine, grated ginger, and lemon juice for at least half an hour, or several hours for a more intense flavor. They are then seared on all sides in a grill pan with a sprig of thyme.

Serve with rice, potatoes, or grilled vegetables. This recipe serves four.

Instructions

Tip: tap a step to mark it as done.

  1. For the marinade, blend the wine (or vinegar), soy sauce, grated ginger, and lemon juice. Place the whole tenderloins in the marinade.

  2. Marinate the meat for about 30 minutes at room temperature, turning it several times. For a stronger flavor, marinate for several hours.

  3. Heat a little oil in a grill pan and sear the tenderloin over high heat on all sides. Add a sprig of thyme and cook until the outside is seared.

  4. Transfer the tenderloin to an oven preheated to 180°C (350°F) and roast until tender, about 15 minutes.

  5. Remove the tenderloin from the oven and let it rest in the pan for 5 minutes. Slice before serving, cutting only as much as you plan to serve so the rest does not dry out.

  6. Serve with rice, potatoes, or grilled or boiled vegetables.

Tip: If marinating the tenderloin for several hours, keep it in the refrigerator. Before searing, remove it from the marinade and pat it dry so it sears quickly in the hot pan rather than steaming.
