This bacon-wrapped pork tenderloin with ground pork and cheese is a juicy meat roll baked in a ribbed loaf pan, known in Slovakia as a srnčí chrbát pan. The pan is lined with bacon, then filled with half the tenderloin slices, brushed with egg and sprinkled with cheese. Next comes a layer of ground pork mixed with soaked bread, eggs, garlic, and parsley, followed by the remaining tenderloin and the overhanging bacon. The roll bakes for about 90 minutes, covered with foil for the first half and then uncovered until crisp.

Instructions

Tip: tap a step to mark it as done.

  1. Line a ribbed loaf pan with bacon, letting the ends hang over the edges. Arrange half the tenderloin slices over the bacon, season with pepper, brush with egg, and sprinkle with cheese.
  2. Soak the bread in water or milk, then mix it with the ground pork, eggs, salt, pepper, garlic, and parsley. Spread the mixture over the pork slices and cover with the remaining slices. Fold the overhanging bacon over the top and cover the pan with aluminum foil.
  3. Bake in an oven preheated to 180 °C (350 °F) for about 90 minutes. After 45 minutes, remove the foil and continue baking until the bacon is crisp.
  4. Serve with potatoes or rice.

Tip: Let the baked meat roll rest in the pan for about 10 minutes before turning it out so the juices are reabsorbed and the slices hold together when cut. Slice with a sharp, long-bladed knife.
