These hard-boiled eggs stuffed with ground pork and béchamel are baked in the oven, unlike classic cold stuffed eggs. Ground pork is sautéed with onion, simmered in white wine with tomato paste, and mixed with the scooped-out yolks and half of a white sauce made with butter, flour, milk, and nutmeg. The egg white halves are filled with this mixture, arranged in a baking dish, and briefly baked at 180°C (350°F) with cheese. Serve them for lunch or when entertaining guests.

Instructions

Tip: tap a step to mark it as done.

  1. Finely chop the onion and sauté it with the ground pork. Once the onion softens, pour in the white wine and simmer the meat in it. Meanwhile, hard-boil the eggs. Let them cool, then peel, halve, and scoop out the yolks with a spoon.

  2. Make the white sauce: heat olive oil in a skillet and melt the butter in it. Sprinkle in the flour and stir, then gradually pour in the milk, stirring constantly. Add nutmeg, salt, and pepper, and cook until the sauce thickens.

  3. In a bowl, combine the cooked ground pork with the crumbled yolks. Pour in half of the white sauce and mix well. Fill the egg white halves with the mixture and arrange them in a baking dish.

  4. Pour the remaining sauce over the eggs, spread with the tomato paste, and sprinkle with cheese. Bake at 180°C (350°F) for about 10 minutes.

Tip: Let the wine almost completely evaporate as the meat simmers so the filling isn't too runny. You can cut a thin slice off the bottom of each egg white half to help it sit flat in the dish.
