Pork loin roasted in dark beer is a dish associated with Nuremberg, where cooks were using beer to soften lean pork loin as early as the 14th century. The meat is rubbed with salt and paprika and refrigerated overnight, then cut into slices and arranged upright in a roasting pan with onion rings. Prunes, dried apricots, and raisins softened with boiling water are scattered between the slices, then dark beer is poured over everything. The pork roasts for about two hours at 170–190 °C (340–375 °F). The recipe serves eight.

Instructions

Tip: tap a step to mark it as done.

  1. Pat the whole piece of pork dry with a paper towel. Season all sides with salt and sprinkle generously with sweet paprika until the entire surface is red. Refrigerate overnight.

Cut the onions into thick rings. Pour boiling water over the dried fruit to soften it before roasting.

  2. Cut the pork into approximately 10–12 slices. Season each slice with more salt and paprika to taste. Grease a roasting pan with the olive oil.

Place two onion rings against each slice of pork and stand it upright in the roasting pan. Repeat with all the slices.

  3. Scatter the softened prunes, apricots, and raisins evenly in the roasting pan. Pour in the beer and add the bay leaves.

Roast in an oven preheated to 170–190 °C (340–375 °F) for approximately 120 minutes. Check during roasting to make sure the crust on the meat is not burning, and lower the temperature if it starts to burn.

  4. Serve the pork warm, as it is less flavorful once cold. The alcohol in the beer evaporates during roasting. Serve with roasted vegetables, a fresh salad, or potatoes.

Tip: Choose a roasting pan that holds the slices snugly upright so they support one another. If too much beer evaporates, add a little hot water to keep the sweet fruit on the bottom from burning.
