Pork ribs with a honey and dark beer marinade are spicy ribs perfect for a cookout. The marinade combines honey caramelized with butter, sautéed onion and garlic, dark beer, tomato paste, chili pepper, and lemon juice, reduced until thick and syrupy. The ribs are coated on all sides and left to marinate in a sealed bag with the air pressed out. Serve with vegetables and bread; the recipe serves six.

Instructions
Tip: tap a step to mark it as done.
Let the honey and butter caramelize lightly in a skillet. Add the halved onion and peeled garlic and sauté.
Pour in the beer, add the remaining ingredients, and cook, stirring occasionally, until the marinade is thick and syrupy. Let cool slightly.
Cut the ribs into sections of 3–4 bones and coat them on all sides with the marinade. Place them in a sturdy plastic bag, press out as much air as possible, and tie the bag closed.
Heat water in a large pot, add the bag of ribs, and boil uncovered for about an hour. Finish the ribs on a hot grill until crisp.
Tip: Choose a bag designed for oven cooking or vacuum sealing, as an ordinary thin plastic bag could be damaged in boiling water. Turn the ribs frequently on the grill, since honey burns easily.
