Homemade dried pork with herbs is a cured meat made without dyes or preservatives, using a quality cut of pork, salt, and seasonings. The pork is trimmed of fat and coated with a mixture of chopped bay leaves, cilantro, thyme, rosemary, and black pepper. It is then thoroughly salted and refrigerated for two days, turning it regularly. The flavor can be milder or more strongly seasoned, depending on how many herbs you use.

  1. Gather all the ingredients: pork, salt, pepper, and dried herbs.

  2. Pat the pork dry with paper towels and trim off all the fat. Chop the bay leaves and mix them with the cilantro, thyme, and rosemary. Season the pork with black pepper and sprinkle both sides with the herb mixture.

  3. Place the pork in a container, coat it with salt on all sides, and refrigerate for 2 days. Turn it regularly during these two days so it is evenly salted on all sides.

  4. After two days, remove the pork from the refrigerator, rinse it under running water, and pat it dry with paper towels.

  5. Coat the pork with the seasonings again, this time without salt. Wrap it in clean, dry cheesecloth and leave it in the refrigerator or another cool place for 2 weeks. If refrigerating it, turn it twice a day. The pork is then ready.

Tip: Choose an evenly thick, boneless cut, such as pork loin, so it salts and dries evenly throughout. Slice the finished pork very thinly, preferably with a meat slicer, as thick slices will be tough.
