Pork with porcini sauce is a special-occasion dish, braised with prosciutto and dried mushrooms and finished with heavy whipping cream. The pork slices are first rubbed with a mixture of four-color peppercorns, rosemary, and thyme crushed in a mortar, then seared in olive oil. Prosciutto keeps them juicy, while porcini add a rich mushroom aroma. Serve with roasted potatoes.

Instructions
Tip: tap a step to mark it as done.
- Thoroughly crush the whole four-color peppercorns with the rosemary and thyme in a mortar.
- Rub the seasoning mixture onto both sides of the pork. Sear on both sides in a little olive oil, then cover and braise for about 15 minutes.
- Add the sliced prosciutto and dried porcini to the pork and braise until the meat is tender.
- Remove the tender pork from the pan and keep warm.
- Pour the cream into the pan with the cooking juices, prosciutto, and mushrooms, and cook until the sauce thickens. Serve the pork with the sauce and roasted potatoes.
Tip: Soak the dried porcini in a little hot water until softened, then pour the soaking liquid into the pan with the pork through a fine-mesh strainer, as grit often settles at the bottom.
