Baked dark bread filled with bacon and processed cheese makes a hearty, quick weeknight dinner. The top is cut off the loaf and the center is hollowed out, then the bread is briefly baked and filled with a thick sauce of cooked smoked bacon, onion, cream, and processed cheese seasoned with mixed peppercorns. Covered with the cut-off top, it bakes for another 15 to 20 minutes at 180°C (350°F). The bread pieces removed from the center are toasted alongside the loaf and used for dipping.

Instructions

Finely chop the onion and bacon. Cook the bacon in a skillet until almost done, then add the onion and cook until golden. Stir in the cheese, cream, and pepper and simmer briefly until the sauce thickens slightly.
Cut the top off the loaf and hollow out the center.
Place the loaf on a baking sheet, arrange the removed bread pieces alongside it, and bake for about 10 minutes. Remove the loaf from the oven, pour the cheese sauce into it, and cover with the cut-off top. Bake at 180°C (350°F) for approximately 15–20 minutes and serve.
Tip: Leave the sides and bottom of the loaf at least 2 centimeters thick so the sauce does not soak through and leak out. Stir the cheese and cream over low heat, as the mixture can easily stick to the bottom of the pan.
