This pea and egg spread is a simple blend of cooked peas, hard-boiled eggs, spreadable processed cheese, and Niva, a Czech blue cheese. Boil the frozen peas in salted water for just a few minutes, then cool them in ice water to preserve their color. Blend them or mash them with a fork, then stir in the finely chopped eggs and both cheeses. Spread on bread for breakfast, a midmorning snack, or dinner, and garnish with basil leaves or parsley.

Instructions
Tip: tap a step to mark it as done.
Add the frozen peas to boiling salted water and cook for a few minutes. Drain and cool in ice water. Hard-boil the eggs.
Peel the eggs and chop finely. Blend the peas or mash them with a fork.
Place the peas, chopped eggs, crumbled Niva, and processed cheese in a bowl. Mix thoroughly and season with salt and ground black pepper.
Tip: Spread the cooled peas on a kitchen towel and pat dry, since excess water would thin the spread. If blending the peas, add the processed cheese to help them blend more smoothly.
