This egg salad spread is made with 5 hard-boiled eggs and a tub of cottage cheese, which replaces both mayonnaise and processed cheese. Half the cottage cheese is blended until smooth to bind the spread and make it easy to spread, while mustard and chives add flavor.

It is ready in 25 minutes, including boiling the eggs, and makes enough for about 10 slices of bread. Unlike an egg spread made with processed cheese, this version uses cottage cheese instead. It keeps in a sealed container in the refrigerator for 2 days.

Instructions

Tip: tap a step to mark it as done.

  1. Boil the eggs

    10 min

Lower the eggs into boiling water and cook for 10 minutes until hard-boiled. Drain and cover with cold water.

  2. Peel and grate

    5 min

Leave the eggs in the cold water for 5 minutes to make them easier to peel. Peel and coarsely grate them, or mash them with a fork.

  3. Blend the cottage cheese

    5 min

Use an immersion blender to blend half the cottage cheese with the mustard until smooth; this creamy mixture will bind the spread. If you do not have a blender, mash it with a fork; the spread will be lumpier.

  4. Mix the spread

    5 min

In a bowl, mix the eggs, blended cottage cheese mixture, remaining cottage cheese, and chives. Season with salt and pepper, then taste.

  5. Serve

Spread on dark bread, whole-grain bread, or bread rolls. Store in a sealed container in the refrigerator and use within 2 days.

Tip: If there is a lot of liquid in the tub, drain it off so the spread does not become runny. For a packed snack, pack the spread separately, spread it on the bread just before eating, and include an ice pack if possible.
