Sardine and egg spread is a smooth fish spread made with 2 cans of sardines in oil, 2 hard-boiled eggs, and 100 g of quark (farmer's cheese), flavored with mustard, lemon juice, and scallions. The sardines are mashed with a fork, soft bones and all, and quark mellows their flavor in place of mayonnaise.
It is ready in 30 minutes, including boiling the eggs, and makes enough for about 12 slices of bread. Unlike tuna and egg spread, it uses sardines and quark instead of mayonnaise. It keeps in a sealed container in the refrigerator for 2 days.

Instructions
Tip: tap a step to mark it as done.
Boil the eggs
10 minPlace the eggs in boiling water and cook for 10 minutes until hard-boiled. Drain, cover with cold water, and let cool.
Mash the sardines
5 minDrain the sardines in a strainer and discard the oil. If desired, remove the backbone from larger pieces, though it is soft and can be mashed. Mash the sardines in a bowl with a fork.
Mix the spread
5 minPeel the eggs and finely grate them. Mix the quark with the mustard and lemon juice, then add the sardines, eggs, and finely chopped scallions and stir to combine. Season with salt and pepper, using only a little salt because the sardines are already salty.
Let chill
10 minRefrigerate the spread for 10 minutes to let the flavors blend.
Serve
Spread on dark bread or bread rolls. Store in a sealed container in the refrigerator and use within 2 days.
Tip: When packing this spread for a snack, keep it in a separate container, spread it on bread just before eating, and include an ice pack if possible. Sardines in tomato sauce are not suitable, as they would make the spread too runny.
