These chicken steaks are thick slices of chicken breast, quickly seared in hot oil and finished over low heat. The sauce is made by slowly melting processed cheese and coarsely grated Niva, a Czech blue cheese, into cooking cream, then pouring it over the chicken just before serving.

Instructions
Tip: tap a step to mark it as done.
Prepare the chicken
Cut the chicken breasts into thick slices and pound them lightly. Season with salt, black pepper, and grill seasoning.
Sear the chicken
Heat the oil in a skillet and sear the chicken for about 2 minutes per side. Reduce the heat and cook for about 3 more minutes, until cooked through. Transfer to a warm plate.
Make the Niva blue cheese sauce
Warm the cooking cream over low heat and add the processed cheese. While it melts, coarsely grate the Niva and stir it into the cream. Heat the sauce over the lowest heat for about 5 minutes, stirring occasionally.
Serve
Pour the hot sauce over the chicken and serve with boiled potatoes, rice, or a vegetable salad.

Tip: Cut the chicken into slices of equal thickness so they cook evenly without drying out. Do not add salt to the sauce; the Niva and processed cheese are salty enough.
