These spinach-stuffed potato dumplings are savory potato dough pockets topped with Niva, a Czech blue cheese, and melted butter after cooking. The dough is made with finely grated potatoes boiled in their skins, eggs, and semi-coarse wheat flour. Each square of dough gets a teaspoon of spinach seasoned with salt and pepper, then the edges are pressed firmly together and the dumplings are boiled in salted water. They make a filling lunch or dinner for four that even Popeye would love.

Instructions
Tip: tap a step to mark it as done.
Season the thawed spinach with salt and pepper. Peel the cooled potatoes and finely grate them into a bowl. Add salt and the eggs, mix, and gradually work in enough flour to make a dough that is not too stiff.
Roll out the dough on a floured board and cut it into equal-sized squares. Place a teaspoon of seasoned spinach on each square, fold the dough over the filling, and press the edges firmly together.
Cook the filled dumplings in boiling salted water. Lift them out once cooked, sprinkle with crumbled Niva, and drizzle with melted butter.
Tip: Squeeze the thawed spinach well; otherwise, its moisture could wet the edges and cause the dumplings to open during cooking. Lift them out with a slotted spoon, as draining them in a colander could tear them.
