Makovník is a Slovak poppy seed roll. This potato-dough version stays fresh longer than a traditional yeast-dough roll thanks to the boiled potatoes. The dough is made with grated potatoes boiled in their skins, all-purpose flour, butter, sugar, an egg, and baking powder, so there is no need to wait for it to rise. The filling combines ground poppy seeds with powdered sugar, oil, and grated lemon zest.

This recipe makes three rolls. Before baking, brush them with egg yolk, prick them with a fork, and sprinkle with poppy seeds if desired.

Instructions

Tip: tap a step to mark it as done.

  1. Peel the potatoes and grate them once cooled. Add the flour, sugar, softened butter, beaten egg, and baking powder, and work into a soft, supple dough.

  2. Mix the ground poppy seeds with the powdered sugar. Wash the lemon thoroughly, finely grate its zest, and stir the zest into the poppy seed mixture. Gradually add the oil and mix well.

  3. Divide the dough into 3 portions. Roll out each portion, spread with the filling, and roll up. Place the rolls on a greased baking sheet, brush with egg yolk, prick with a fork, and sprinkle with poppy seeds if desired. Bake in an oven preheated to 180 °C (350 °F) for about 40 minutes, until golden brown.

Tip: Roll out the soft, buttery dough on a floured cloth and use the cloth to help roll it up. Slice the rolls only after they have cooled, as they break when warm.
