This poppy seed and quark tart has a buttery shortcrust pressed into the pan, a poppy seed filling with raisins, plum butter (thick plum jam), butter, and cinnamon, and a fluffy quark (farmer's cheese) topping folded with four whipped egg whites. Decorate the top with cocoa pastry cutouts made from the reserved dough. Bake for almost 70 minutes, brushing it with egg yolk halfway through to keep the quark filling from drying out.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the raisins and pastry

Pour hot water over the raisins and let them plump up. Combine the flour, baking powder, egg yolks, butter, powdered sugar, and vanilla sugar to make a smooth shortcrust dough. Set aside about a quarter of the dough for decorations and work the cocoa powder into it.

  2. Line the pan

Roll out the larger portion of dough into a thin sheet and transfer it to a greased and floured tart pan. Press the dough up the sides to a height of at least 2–3 cm. Cut decorative shapes or strips from the cocoa dough.

  3. Make the poppy seed filling

Mix the ground poppy seeds with the powdered sugar, drained raisins, lemon juice, plum butter, melted butter, and cinnamon. If the filling is dry, add a little milk. Spread it over the pastry.

  4. Make the quark filling

Mix the quark with the sour cream, coarse wheat flour, powdered sugar, and two egg yolks. Whip the four egg whites until they hold peaks, then gently fold them into the quark mixture. Spread the filling over the poppy seed layer and arrange the pastry decorations on top.

  5. Bake

Cover the edges of the pan with aluminum foil and bake the tart in an oven preheated to 180 °C (350 °F) for almost 70 minutes. After 30 minutes, brush it with the egg yolk beaten with 1 tbsp water, then finish baking. Let cool and dust with powdered sugar.

Tip: Add the sugar, raisins, and plum butter to the poppy seed filling to taste; the filling should be moist, so stir in a little milk if it is dry. Spread the quark filling immediately after folding in the whipped egg whites.
