These soft, quark-filled yeast pastries use a simple dough with no milk, butter, or eggs—just water, vegetable oil, sugar, active dry yeast, and flour. They are filled with quark (farmer's cheese), powdered sugar, egg yolk, and raisins.

The dough rises in the refrigerator for about two hours and can also be used for filled sweet buns or strudel.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the liquid mixture

Stir the sugar and oil into the lukewarm water.

  2. Knead the dough

Mix the active dry yeast with the flours. Pour in the lukewarm water mixture, add a pinch of salt, and knead until smooth. Cover with plastic wrap and refrigerate for about 2 hours.

  3. Prepare the filling

Mix the quark with the powdered sugar and egg yolk, then stir in the raisins.

  4. Shape the pastries

Remove the dough from the refrigerator, gently roll it out on a floured work surface, and cut it into squares. Place a tablespoon of quark filling on each square and fold into your preferred shape, such as an envelope.

  5. Bake

Arrange the pastries on a baking sheet lined with parchment paper, brush with beaten egg, and bake in an oven preheated to 180–190 °C (350–375 °F) for about 20–25 minutes, until golden brown.

Tip: Fold the corners of each square over the filling toward the center and pinch them firmly together, using a little beaten egg to help seal them if needed, so the pastries do not open during baking.
