This quark cake has a tender ground-nut crust, a filling of quark (a fresh farmer's cheese) mixed with butter, egg yolks, and sugar, and a meringue topping briefly baked until golden.
Its flavor is reminiscent of žemľovka, a Slovak bread pudding, and you can add raisins to the filling. Slice the cake once cooled.

Instructions

Prepare the crust
Thoroughly mix all the crust ingredients, roll out the dough, and transfer it to a greased and floured sheet pan. Preheat the oven to 190–200 °C (375–400 °F).
Spread the filling
Mix the quark with the powdered sugar, butter, vanilla sugar, and egg yolks. Add raisins to taste, if desired. Spread the filling over the dough.
Bake the cake
Bake at 190–200 °C (375–400 °F) for 25–35 minutes. Meanwhile, beat the egg whites with the powdered sugar until stiff peaks form.
Bake the meringue topping
Shortly before the cake is done, remove it from the oven, spread the meringue over it, and return it to the oven until the topping is golden. Serve cooled.
Tip: Use a spoon to pull the meringue into peaks on top; they will turn golden in the oven while the rest of the meringue stays pale.
