Murín v košeli is a layered nut cake with a base made from whole eggs, coarse wheat flour, and ground nuts, a buttercream made with cooked egg yolk custard, and a white “shirt” of meringue whipped with sugar over simmering water. Finish it with grated chocolate.

It shares only its name with the Austrian chocolate pudding of the same name.

Instructions

Tip: tap a step to mark it as done.

  1. Bake the cake

Beat the whole eggs with the powdered sugar until light and foamy. Add the coarse wheat flour, ground nuts, and baking powder, and gently fold together. Spread the batter in a baking pan lined with parchment paper and bake at 180 °C (350 °F) for about 20 minutes. Let cool.

  2. Cook the custard

Cook the milk, egg yolks, and all-purpose flour, stirring constantly, until thick. Let cool.

  3. Make the buttercream

Beat the butter with the powdered sugar until light and fluffy, then gradually beat in the cooled custard. Spread the buttercream over the cake.

  4. Whip the meringue over steam

Beat the egg whites with the powdered sugar in a bowl set over a pot of boiling water for about 5–7 minutes, until thick and glossy. Spread the meringue over the buttercream and sprinkle with grated chocolate or drizzle with chocolate glaze. Refrigerate until set before cutting into bars.

Tip: Do not let the bottom of the bowl touch the boiling water, or the egg whites will curdle. After removing the bowl from the steam, keep beating the meringue briefly until cool; hot meringue would melt the buttercream underneath.
