These Slovak nut cake bars use whipped egg whites in the batter and egg yolks in the icing: beat the yolks with powdered sugar and spread the icing over the cake while it is still hot. Drizzle chocolate glaze over the top.

This way, both the whites and yolks are used. The icing needs to dry completely, so it is best to wait until the next day to cut the cake into bars with a wet serrated knife.

Instructions

Tip: tap a step to mark it as done.

  1. Make the batter

Beat the margarine and powdered sugar until light and fluffy. Using a mixer, mix in the ground nuts and the flour combined with the baking powder. Beat the egg whites until stiff peaks form, then gently fold them into the batter by hand.

  2. Bake

Spread the batter in a greased and floured baking pan. Bake in an oven preheated to 170–180 °C (340–350 °F) for about 25–30 minutes.

  3. Make the icing

While the cake bakes, beat the egg yolks with the powdered sugar until the icing is smooth.

  4. Ice the hot cake

Spread the icing over the cake as soon as it comes out of the oven. Work quickly so it spreads evenly before it dries. Then use a fork to drizzle the melted chocolate glaze over the icing.

  5. Let the icing set

Let the cake set completely, preferably overnight, then cut it into bars with a wet serrated knife.

Tip: If the icing does not dry properly, finish drying it in the oven at 130–150 °C (265–300 °F).

Tip: While the egg yolk icing is still wet, drag a toothpick back and forth through the chocolate drops in a crisscross motion to create a marbled pattern.
