Dalmatín cake bars, named for their Dalmatian-like spots, have a spotted cake base made by alternating dollops of light egg-white batter and dark cocoa batter in the pan. The baked cake is soaked with sweetened milk to keep it moist, then spread with a thick chocolate pudding and butter filling. A layer of whipped cream and grated chocolate finishes the top. A 34 × 40 cm pan makes enough for at least eight people.

Instructions

Tip: tap a step to mark it as done.

  1. Beat the egg whites with the sugar until foamy. Add the oil and the flour mixed with the baking powder, and fold together gently. Spoon dollops of the white batter into a 34 × 40 cm baking pan lined with parchment paper.

  2. Beat the egg yolks with the sugar until foamy. Pour in the milk and oil, then stir in the flour mixed with the cocoa powder and baking powder. Fill the gaps between the white dollops with the dark batter. Bake in a preheated oven at 200°C (400°F) until golden.

  3. Dissolve the sugar in the milk and pour it over the baked cake.

  4. Filling

Cook a thick chocolate pudding and let it cool. Beat the butter with a mixer until fluffy, then beat in the cooled pudding a spoonful at a time.

  5. Spread the filling over the cake and smooth the surface. Whip the cream and spread it over the filling. Sprinkle with grated chocolate and refrigerate until set.

Tip: Beat the egg whites with the sugar until stiff and glossy. The dollops of light batter need to hold their shape in the pan; otherwise, they will blend into the dark batter.
