This fluffy quark cheesecake with chocolate and raisins uses 1 kg of quark, a fresh farmer's cheese, with no crust or flour, thickened only with a tablespoon of semolina and a little starch. Beat the eggs with powdered sugar, add the quark and lemon juice, then fold in the chocolate and raisins to taste. Pour the mixture into a pan and bake for 30 to 40 minutes at 180–200°C (350–400°F). Serve with coffee, tea, or hot chocolate.

Instructions
Tip: tap a step to mark it as done.
- Beat the eggs with the sugar, then add the quark and lemon juice.
- Mix thoroughly, add the semolina and starch, and mix again. Finally, fold in raisins to taste and pour the mixture into a baking pan.
- Bake at 180–200°C (350–400°F) for approximately 30–40 minutes.
- Let the baked cheesecake cool, then pour melted chocolate over the top.
- Tip: You can also add cinnamon, lemon or orange zest, ginger, nutmeg, other berries, dried fruit, or nuts to the batter.
Tip: Press the quark through a sieve or blend it for a smooth cheesecake without lumps. Let the baked cheesecake cool in the turned-off oven with the door ajar, as a sudden temperature change will cause it to sink and crack more.
