This eggless cake is made with acidophilus milk (cultured milk), powdered sugar, coarse wheat flour, vegetable oil, cocoa powder, and baking soda, with chopped nuts and raisins mixed in. Use the empty milk container to measure both the sugar and flour. Spread the baked cake with jam and finish with a buttery cocoa glaze.

  1. Make the batter

Pour the acidophilus milk into a bowl and use the empty container to measure the powdered sugar and coarse wheat flour. Add the oil, cocoa powder, baking soda, chopped nuts, and raisins, and mix everything into a smooth batter.

  2. Bake

Pour the batter into a greased and floured baking pan with high sides. Bake in an oven preheated to 180 °C (350 °F) for about 35 minutes, until a skewer inserted into the center comes out dry.

  3. Add the jam and glaze

Spread the baked cake with jam. Melt the butter, powdered sugar, cocoa powder, and water together in a bowl set over steaming water, stirring until smooth, then pour the glaze over the cake.

Tip: Toss the raisins in a tablespoon of flour before adding them to the batter to keep them from sinking to the bottom. The cake is moister the next day, once the jam and glaze have soaked in.
