Pork rolls stuffed with pickles and cheese are a variation on fried pork loin cutlets. Thin, pounded slices of pork are seasoned with salt, pepper, and lemon juice and left to rest for half an hour. Strips of cheese and lengthwise pickle quarters are then placed on top, and the meat is rolled up, secured with toothpicks, and browned on both sides in hot oil. You can add oranges or prunes to the rolls when finishing them in the oven and serve them with potatoes.

  5. Serve the pickle-and-cheese-stuffed rolls warm or cold for a variety of occasions.

Tip: Pat the pickle quarters dry with a paper towel before rolling them up, as the brine would splatter in the hot oil. Place the cheese slightly away from the edges of the meat to keep it from leaking out during browning.
