Cheese-stuffed kefir flatbreads are savory flatbreads that resemble lokše, Slovak potato flatbreads, in both appearance and taste. The dough, made with kefir, an egg, oil, semi-coarse wheat flour, and a pinch of baking soda, rests for about half an hour. It is then shaped into flatbreads enclosing a filling of grated cheese mixed with an egg. You can adjust the filling to your taste and serve the flatbreads with a little butter.

Instructions
Tip: tap a step to mark it as done.
- Mix the kefir, 1 egg, salt, sugar, and oil thoroughly.
- Mix 2 cups of the flour with the baking soda and add to the kefir mixture. Gradually work in the remaining flour and knead into a smooth dough. Let rest for about 30 minutes.
- Grate the cheese and mix with the remaining egg.
- Divide the dough into 9 pieces. Roll out each piece, place some cheese filling in the center, bring the edges together and seal, then roll out the filled flatbread again.
- Cook the flatbreads in a dry skillet until golden on both sides, then spread with butter.
Tip: Roll the filled flatbread seam-side down, working gently from the center toward the edges to keep the dough from tearing and the cheese from leaking out. You can use buttermilk instead of kefir.
