These savory kefir pastry bites with salami and cheese are small appetizers for guests that can take the place of traditional open-faced sandwiches. The dough, made with flour, kefir, eggs, sour cream, oil, and baking powder, rests under a kitchen towel for about half an hour. Meanwhile, prepare the filling with grated salami, cheese, pressed garlic, and herbs.

Cut smaller and larger circles from the rolled-out dough and sandwich the filling between them. Bake the pastries for 20–25 minutes at 180 °C (350 °F). Each one is small enough to eat in a single bite.

Instructions

Tip: tap a step to mark it as done.

  1. Gradually mix together all the dough ingredients to form a dough that is not overly sticky. Cover with a kitchen towel and let rest at room temperature for about 20–30 minutes. Meanwhile, prepare the filling.

  2. Grate the salami and cheese for the filling. Add the pressed garlic and herbs, then mix until smooth.

  3. Roll out the dough to an even thickness. Using round cutters in two sizes, cut out equal numbers of smaller and larger circles.

  4. Place a little filling on each smaller circle and cover with a larger circle. Seal the overhanging edges to the bottom circle to keep the filling from leaking out. Repeat with all the dough, then brush the pastries with beaten egg.

  5. Line a baking sheet with parchment paper and place the pastries close together on it. Bake in an oven preheated to 180 °C (350 °F) for about 20–25 minutes, judging doneness by their color.

Tip: Keep the filling in the center of the smaller circles, since greasy edges will not seal to the top circles. Poke a small hole in each pastry with a toothpick to let steam escape and keep the edges from splitting.
