This broccoli, carrot, and cheese quiche is made much like a fruit tart, but with vegetables instead of fruit. Roll out a tender dough made with all-purpose flour, butter, an egg, and sour cream, fit it into a pan, prick it with a fork, and prebake it for 10 to 15 minutes at 180°C (350°F). Arrange the carrots and broccoli over the crust and pour over a mixture of eggs, sour cream, and grated cheese. This kid-friendly quiche bakes for another 30 to 40 minutes, then gets a final topping of cheese and goes back into the oven.

Combine the flour, salt, butter, egg, and a little sour cream to make a dough. If using room-temperature butter, refrigerate the dough until firm. Roll it out on a floured surface to fit your pan. Transfer it to a greased and floured pan, prick it all over with a fork, and bake at 180°C (350°F) for about 10–15 minutes.
Meanwhile, clean and finely chop the vegetables; add other vegetables if desired. Boil briefly in salted water, drain, and rinse with cold water.
Whisk the eggs with the sour cream, add the cheese of your choice, season with salt and pepper, and pour the mixture over the vegetables. If it is too thin, thicken it with flour. Pour the vegetable mixture into the prebaked crust and bake for another 30–40 minutes. Finally, sprinkle with the remaining grated cheese and return to the oven to melt the topping.
Tip: Brush the prebaked crust with a little egg from the filling and return it to the oven for a few minutes. The baked-on layer will help keep the bottom from getting soggy.
