Instructions

Tip: tap a step to mark it as done.

  1. Prepare the broccoli and chicken

Divide the broccoli into small florets, boil in salted water for 3–5 minutes, and drain. Pat the chicken cutlets dry with a paper towel, place between two sheets of plastic wrap, and gently pound them thin.

  2. Roll up the chicken

Remove the top sheet of plastic wrap and season the chicken with salt and pepper. Place cheese and broccoli along one edge of each cutlet. Use the bottom sheet of plastic wrap to help roll up the chicken, then secure with toothpicks.

  3. Sear and bake

Heat the oil in a skillet and sear the rolls over high heat for a few minutes until golden. Transfer to a baking dish, remove the toothpicks, and bake in a preheated oven at 200°C (400°F) for 15 minutes, until the chicken is cooked through.

Slice the rolls and serve. You can use turkey breast instead of chicken breast.

Tip: Pound the cutlets evenly to about half a centimeter thick so they roll easily and cook evenly. Keep the filling away from the edges so the cheese does not leak out during baking.
