These broccoli patties with bacon and quark (farmer's cheese) are made with finely chopped raw broccoli, English-style streaky bacon, egg yolks, garlic and beaten egg whites. They contain no flour or breadcrumbs and are baked on a sheet pan instead of fried.
This recipe makes about 10 patties, which go well with vegetables or mashed potatoes.

Instructions

Prepare the mixture
Remove the broccoli stalk and finely chop the broccoli. Cut the bacon into small cubes and press the garlic. Mix with the quark, egg yolks and milk, then season with salt and pepper.
Fold in the egg whites
Beat the egg whites until stiff peaks form, then gently fold them into the mixture as the final addition.
Shape the patties
Spoon mounds of the mixture onto a baking sheet lined with parchment paper and flatten them into patties. This recipe makes about 10.
Bake
Bake in an oven preheated to 180 °C (350 °F) for 10 minutes. Once the patties have set, brush them with oil (optional) and bake for another 10 minutes. Then flip them and bake for 10 more minutes.
Serve with vegetables or mashed potatoes.

Tip: Chop the raw broccoli as finely as possible, as larger pieces will not soften during the half hour of baking. Put the patties in the oven immediately after folding in the beaten egg whites, before they lose their air.
