Banitsa is a well-known Bulgarian savory pie made with puff pastry and Balkan cheese, a white brined cheese, in this simplified version. The pastry sheets are brushed with melted butter and layered with cheese mixed with eggs, or they can be rolled up. Before baking, the banitsa is cut into squares to make serving easier. It bakes for at least 30 to 35 minutes at 180°C (350°F), and you can also fill it with meat instead of cheese.

Instructions

Tip: tap a step to mark it as done.

  1. Thaw the puff pastry if frozen; if refrigerated, simply take it out of the refrigerator. Divide the pastry into several pieces.

  2. Mix the cheese with the eggs in a bowl. Brush a baking sheet with melted butter, then alternate layers of butter-brushed pastry sheets and the cheese mixture, finishing with a cheese layer. You can also roll up the pastry, or simply layer it and cut it into squares for easier serving. Finally, whisk the sour cream with the eggs and pour it over everything, as you would for francúzske zemiaky, a Slovak potato casserole.

  3. Bake the banitsa in an oven preheated to 180°C (350°F) for at least 30 to 35 minutes.

Tip: Keep any puff pastry sheets you are not working with covered and chilled, as they tear and stick when warm. Let the baked banitsa stand briefly before serving so the topping can set.
