This savory cheese yeast bread has seven thin layers with grated hard cheese melted between them. The dough, made with semi-coarse wheat flour, milk, active dry yeast, an egg, and butter, is left to rise until doubled in size, then divided into seven equal pieces. The rolled-out layers are placed in a 20 × 25 cm pan, brushed with melted butter, and sprinkled with cheese. The bread bakes for 40 minutes at 180°C (350°F) and feeds the whole family. It is also a good option for serving guests.

Instructions

Tip: tap a step to mark it as done.

  1. Dissolve the active dry yeast and sugar in the warm milk. Add the egg, salt, 50 g softened butter, and sifted flour, then knead into a dough.
  2. Let the dough rise in a warm place until doubled in size. Then divide it into 7 equal pieces.
  3. Roll one piece into a thin sheet and place it in a greased 20 × 25 cm baking pan. Brush with melted butter and sprinkle with grated cheese. Brush the next sheet with butter only, then continue alternating the layers this way.
  4. Do not sprinkle cheese over the final layer; brush it with the egg yolk instead. Cut the bread into squares without separating them completely. Cover with plastic wrap and let rise in a warm place for 20 minutes.
  5. Bake in an oven preheated to 180°C (350°F) for 40 minutes. Serve for breakfast with coffee or tea, or pack as a midmorning snack for work.

Tip: Weigh the dough portions so that all the layers are the same size. If a piece of dough springs back as you roll it, cover it and roll out another piece in the meantime; after a short rest, it will stretch more easily.
