Moravské koláče, round Moravian filled buns, are soft yeast pastries made with butter, egg yolks, and whipped cream. The lemon-scented dough rises for only about 45 minutes, then is rolled out to a thickness of half a centimeter and cut into squares. Each square is shaped into a ball around a teaspoon of filling, then topped with more poppy seed, plum butter, or nut filling in a small indentation. After a short rest, the buns bake for about 20 minutes at 180 °C (350 °F).

    Instructions

Tip: tap a step to mark it as done.

    1. Combine the yeast, granulated sugar, and warm milk to make a yeast starter. Using a wooden spoon, mix the softened butter with the powdered sugar, egg yolks, and vanilla sugar. Place the flour and salt in a bowl, then mix in the egg yolk and butter mixture, lemon zest, and yeast starter.

    2. Whip the cream, then mix it into the dough last. Mix the dough for at least 5 minutes, cover with a kitchen towel, and let rise in a warm place; 45 minutes is enough.

Roll out the risen dough to about ½ cm thick and cut into squares. Place 1 teaspoon of filling in the center of each square, shape into a ball, and place seam-side down on a greased baking sheet.

    3. Make an indentation in the center of each ball and brush the entire exposed surface with beaten egg.

Fill the indentations with poppy seed, plum butter, or nut filling, and let the buns rest for 15 minutes while the oven heats. Bake in a preheated oven at 180 °C (350 °F) for about 20 minutes.

Tip: To check whether the dough has risen enough, press it with a floured finger: the indentation should spring back slowly. If it springs back immediately, let the dough rise a little longer.
