These garlic flatbreads with cheese and quark filling are stuffed half-moons made with a simple dough leavened with kefir and baking soda instead of yeast. Simply mix grated hard cheese, quark (farmer's cheese), and pressed garlic for the filling. Press the edges firmly together to keep the filling from leaking out. You only need a little oil in the pan, so they are less greasy than langoš, a deep-fried flatbread, and work well for lunch, dinner, or serving guests.

Instructions
Tip: tap a step to mark it as done.
Mix the kefir with the salt, sugar, and baking soda in a bowl. Add the all-purpose flour and mix with a whisk. Wrap the dough in plastic wrap and let rest at room temperature for 15–20 minutes.
Press the garlic, grate the cheese, and mix both with the quark. Divide the dough into 4 equal pieces and shape each into a circle on a floured work surface. Place filling on one half of each circle, fold the other half over to form a half-moon, and press the edges firmly together with your fingers to keep the filling from leaking out.
Prepare all the flatbreads the same way.
Heat the oil in a skillet and fry the flatbreads two at a time until golden on both sides. Serve with sour cream if desired.
Tip: Fry the flatbreads over medium heat so the cheese inside has time to melt before the dough gets too dark on the outside. Squeeze any excess moisture from the quark before mixing to keep the filling from leaking out.
