These soft quark and yogurt pancakes are made with eggs and filled with a cheese mixture pressed into the batter as they cook. Quark is a soft curd cheese. The filling combines grated hard cheese, garlic, herbs, and sour cream. Place a small spoonful of filling on a tablespoon of batter in the skillet, then cook the pancakes on both sides until golden. Dinner for four is ready in about 20 minutes; serve with fresh vegetables and a sour cream dip.

Instructions
Tip: tap a step to mark it as done.
Mix the room-temperature quark, eggs, and yogurt together. Add the baking soda, salt, and flour, and stir until the batter is smooth.
For the filling, grate the cheese and add the crushed garlic, herbs, and sour cream. Mix well to distribute the garlic and herbs evenly throughout the cheese.
Heat oil in a skillet. Add a tablespoon of batter, then place a smaller spoonful of cheese filling on top and press it gently into the batter. Once the bottom is browned, flip the pancake and cook the other side until golden. Serve with fresh vegetables and a sour cream dip or sauce.
Tip: Cook the pancakes over medium heat, as the quark batter browns quickly and could remain raw inside. Press the filling into the center, away from the edges, so it does not leak out when you flip the pancakes.
