Oven-baked sweet potato fries are a slightly sweet side for meat or burgers: coat sweet potato sticks in a little starch, olive oil, paprika, and garlic, then bake in a single layer on baking sheets. The starch helps make them crispier on the outside.

Instructions

Tip: tap a step to mark it as done.

  1. Cut the sweet potatoes

    10 min

Preheat the oven to 220 °C (425 °F) and line two baking sheets with parchment paper. Wash the sweet potatoes (you can leave the skins on) and cut into fries about 1 cm thick.

  2. Coat the fries

    3 min

Place the fries in a bowl, sprinkle with the starch, and toss. Add the oil, paprika, garlic, and black pepper, then toss again to coat on all sides.

  3. Bake

    30 min

Spread the fries on the baking sheets in a single layer without letting them touch, and bake for 25–30 minutes. Turn them halfway through. Season with salt only after baking.

Tip: Salt draws water out of sweet potatoes, so salt the fries only after baking. Crowding them onto one baking sheet would cause them to steam rather than roast.
