Instead of being fried, these oil-free oven fries are coated in stiffly beaten egg whites seasoned with salt, pepper, and sweet paprika. Toss thin strips of potato thoroughly in the egg whites, spread them on a parchment-lined baking sheet, and bake for about 25 minutes at 200°C (400°F), until golden. Toss them during baking. Vary the seasonings to taste and serve the fries as a side dish with meat or with a dip.

Instructions

Tip: tap a step to mark it as done.

  1. Peel and rinse the potatoes, then cut them into thin fries.

  2. Beat the egg whites until stiff peaks form, then fold in all the seasonings. Place the potatoes in a large bowl, add the seasoned egg whites, and toss thoroughly to coat every fry.

  3. Line a baking sheet with parchment paper and spread the fries on it. Bake at 200°C (400°F) until golden. Toss them during baking if needed to help them cook evenly.

Tip: Rinse the cut fries under cold water to remove the starch, then dry them thoroughly. The egg white coating will stick better to dry potatoes, making the fries crispier.
