This homemade chicken breast salami is a sliceable cold cut made without a smoker, using just aluminum foil and plastic wrap. Mix the ground meat with cream, egg whites, chopped garlic, salt, sweet paprika, black pepper, and herbs until smooth. Wrap it tightly in aluminum foil, then in several layers of plastic wrap, and tie the ends to keep water out during cooking. Once cooled, slice it for sandwiches or a snack.

Instructions

Tip: tap a step to mark it as done.

  1. Grind the chicken and add the chopped garlic.

  2. Pour in the cream, add the egg whites and seasonings, and mix until smooth. Place the mixture on aluminum foil, wrap it tightly, and twist the ends closed.

  3. Wrap the package in several layers of plastic wrap and tie the ends securely to keep water out.

  4. Place the salami in a pot of water and simmer for 30–40 minutes. Remove it, let it cool, and refrigerate overnight.

  5. Alternatively, stuff the mixture into a sausage casing, twist both ends tightly, and prick the casing in several places with a thin needle.

Bring water to a boil, salt it, and cook the salami in it over very low heat.

Tip: Wrap the mixture in aluminum foil as tightly as possible, without air pockets, so the salami is firm and holds together when sliced. Keep the water at a gentle simmer during cooking.
