Chicken paprikash with cream and lemon is a classic from Czech cuisine that brings back childhood memories for many. Pieces of chicken breast are sautéed with golden fried onions, then simmered with sweet paprika and bouillon until tender. The sauce is thickened with a flour-and-water slurry, mellowed with cream, and brightened with lemon. If you like spicier food, add a few chili peppers at the end.

Instructions
Tip: tap a step to mark it as done.
- Finely chop the onion and fry it in the oil until golden. When it starts to brown, add the chicken pieces seasoned with salt and pepper and sauté for 5 minutes.
- Stir in the sweet paprika and bouillon. Simmer the chicken until tender, then remove it from the pot.
- Thicken the sauce in the pot with a slurry of all-purpose flour and water. Strain the thickened sauce, then return the chicken to it.
- Stir in the cream and season the sauce with salt and a little lemon juice. Serve with pasta or Czech-style bread dumplings.
Tip: Whisk the cold water and flour until smooth, then pour the slurry into the sauce while stirring constantly to prevent lumps. Add the lemon a little at a time, tasting as you go.
