These cornflake-crusted chicken cutlets are baked without added fat. Pounded slices of chicken breast are dipped in buttermilk seasoned with paprika, garlic granules, and salt, then coated in crushed cornflakes. They bake on a parchment-lined baking sheet at 220 °C (425 °F) for 10–12 minutes.
The coating stays crisp even without oil.

Prepare the chicken
Preheat the oven to 220 °C (425 °F) and line a baking sheet with parchment paper. Slice the chicken breasts into cutlets and pound them thin.
Coat the cutlets
Mix the buttermilk, paprika, garlic granules, and salt in a bowl. Coarsely crush the cornflakes. Dip the chicken cutlets in the buttermilk mixture, coat them in the cornflakes, and press the coating on with your hand.
Bake
Place the cutlets on the baking sheet and bake for 10–12 minutes, turning once if needed. Make sure the chicken is cooked through.
Serve with a spicy sauce and a vegetable salad.

Tip: Use a rolling pin to coarsely crush the cornflakes in a bag; fine crumbs will not give you a crisp coating. Pound the thicker parts of the breasts more so the cutlets bake evenly and stay juicy.
