Potato pancakes with chicken and corn are crisp pancakes made from raw grated potatoes and topped with a warm chicken sauté. The batter of grated potatoes, egg, and all-purpose flour is seasoned with salt and marjoram, then pan-fried on both sides. The topping is made with chicken breast cut into strips, sautéed with onion and garlic, and briefly simmered with ketchup and corn. Sprinkle the finished pancakes with grated cheese and serve for lunch or dinner.

Instructions

Potato pancakes
Peel the raw potatoes and grate them finely. Add salt or Vegeta, marjoram, and the egg, then thicken with all-purpose flour. Mix well. Lightly oil a skillet and fry the pancakes on both sides.
Chicken sauté
Peel the onion, cut it into half-moon slices, and sauté in oil until translucent. Add the crushed garlic and chicken breasts cut into thin strips, season with salt, and sauté until browned. Stir in the ketchup, add some water, season with pepper, add the corn, and simmer briefly.
Serve the chicken sauté on a potato pancake sprinkled with grated cheese.
Tip: Sprinkle the pancake with cheese as soon as you take it out of the pan so the cheese melts on the hot surface and helps the chicken topping stay in place.
