Cheese fritters from soaked bread rolls are a practical way to use up bread that is several days old. Torn rolls are soaked in water or milk, squeezed out if necessary, and mixed with grated cheese, eggs, onion and parsley. The mixture is seasoned with salt, ground caraway and Vegeta (a vegetable seasoning), though you can choose the spices to your own taste. The fritters are cheap, simple and ready in about half an hour.

Instructions

Tip: tap a step to mark it as done.

  1. Tear 3 stale bread rolls into small pieces; the harder ones work better. Pour just enough water or milk over them for them to soak well without floating in the bowl.

  2. If you added too much liquid, squeeze the rolls out gently.

  3. Add ½ teaspoon each of salt, ground caraway and Vegeta to the rolls (the spices can also be chosen to your own taste). Mix in a finely chopped small onion, the parsley, the cheese and 2 eggs.

  4. Mix everything thoroughly by hand and shape it into flat cakes or patties. Fry them in oil until golden.

Tip: Shape the fritters with wet hands so the mixture does not stick to your palms. If it is too soft, let it stand for ten minutes; the rolls will absorb the remaining liquid and the mixture will firm up.
