Bread stuffing with stale rolls and ham is a classic side for roast chicken and a useful way to use up stale bread. Mix the chopped rolls with milk and eggs, preferably by hand, then add ham, parsley, chives, caraway seeds, and pepper. Spread the mixture on a baking sheet greased with butter and coated with breadcrumbs, dot the top with butter, and bake for about 30 minutes at 170–180 °C (340–350 °F). Adjust the amount of milk depending on the size of the eggs and rolls.

- Mix the bread rolls with approximately 100 ml milk and the eggs, working the mixture thoroughly, preferably by hand. Start with 3 eggs and add another only if needed, depending on their size. If the mixture is dry, add more milk.
- Add the ham, herbs, Vegeta, caraway seeds, ground black pepper, and salt to taste, approximately 1/2 tsp. Mix thoroughly again. Grease a medium baking sheet with butter and coat it with breadcrumbs.
- Spread the mixture evenly on the baking sheet and dot the top with small pieces of butter. Bake in an oven preheated to 170–180 °C (340–350 °F) for approximately 30 minutes.
- Let the baked stuffing cool and serve with a fresh salad.
Note
For drier stuffing, use less milk and fewer eggs, or spread the mixture in a thinner layer on a larger baking sheet. In that case, bake it for approximately 10 minutes less to keep it from burning.
Tip: To check the moisture, squeeze some of the mixture in your palm: it should hold together without dripping milk. If the stuffing is too dry, it will crumble after baking.
