These Slovak bread dumplings are a quick side dish made from a thin batter mixed with cubed stale bread rolls and beaten egg whites. The batter needs no rising time—just pour it into greased mugs and cook in a water bath for 25 to 40 minutes, depending on their size. Serve the dumplings with sauces or roasted meat while putting leftover rolls to good use.

Instructions
Tip: tap a step to mark it as done.
Sift the flour and salt into a bowl. Whisk the egg yolks with the milk, then gradually combine with the flour to make a thin batter. Stir in the stale bread rolls, cut into cubes.
Beat the egg whites with a pinch of salt until stiff peaks form, then gently fold them into the batter. Prepare 3–4 mugs, each with a capacity of at least 300 ml. Grease them with butter, dust with flour, and fill two-thirds full with batter.
Place the filled mugs in a water bath with the water reaching no higher than halfway up their sides. Cook for 25–40 minutes, depending on the size of the mugs.
The dumplings will rise above the rims of the mugs as they cook. Once cooked, let them cool, then turn them out.
Tip: Keep the water bath at a gentle simmer so boiling water does not splash into the batter. Test the dumplings with a skewer—it should come out dry when inserted into the center.
