Kysnuté knedlíky (yeast dumplings) with kefir and dry yeast are tender, light filled dumplings whose recipe comes from an old almanac. The dough is made from flour, eggs, water, kefir, sugar, salt and dry yeast, and once it is kneaded it only needs to rest for 10 to 15 minutes. The dumplings are then shaped in the usual way.

You can fill them with cabbage, potatoes, quark or berries, so they suit both savory and sweet dishes.

Instructions

Tip: tap a step to mark it as done.

  1. Beat the eggs, then add the water and kefir. Mix the flour with the sugar, add the yeast and salt, and then pour in the kefir mixture.

  2. Knead the dough and let it rest for 10 to 15 minutes. Then shape dumplings from it in the usual way.

  3. The dumplings can be filled with cabbage, potatoes, quark, or various berries. They are very filling.

  4. Drop the dumplings into boiling salted water in batches and cook them covered for about 10 minutes, turning them over halfway through. Remove the cooked dumplings right away and prick them with a fork to let the steam escape.

  5. Tip: The dumplings can also be steamed; they taste good either way.

Tip: Pinch the dough tightly around the filling and roll each dumpling between your palms so that no gap is left; the filling would leak out through it while cooking.
