Potato-crusted chicken cutlets are a variation on classic breaded cutlets, with thin slices of chicken breast coated in a shredded potato mixture instead of breadcrumbs. Coarsely grated raw potatoes are mixed with egg, flour, garlic, salt, and pepper. The chicken is dredged in flour, then coated with the potato mixture, which you press onto the meat with a spoon, before frying in oil. Serve with mashed potatoes or potato salad with mayonnaise.

Instructions
Tip: tap a step to mark it as done.
Trim the chicken breasts, cut into thin cutlets, and season with salt and pepper.
Peel the potatoes and grate them coarsely. Add the flour, egg, chopped garlic, and a little salt and black pepper.
Dredge the chicken cutlets in flour, then coat with the potato mixture, pressing it onto the meat with a spoon.
Place the cutlets potato-side down in a skillet with hot oil. Spread more potato mixture over the top of the chicken and fry the cutlets until golden brown.
Tip: You can replace the flour in the potato mixture with potato starch for a crispier coating that holds together better. Turn the cutlets carefully using two spatulas so the coating does not come off.
