This cauliflower, chicken and potato casserole with cheese combines vegetables, meat and a side dish in one baking pan. Layer parcooked cauliflower and cooked chicken breasts over thinly sliced raw potatoes along with onions and tomatoes. Pour a mixture of sour cream, eggs and garlic over everything, sprinkle with grated cheese and bake for about 30 minutes at 180°C (350°F). It makes a summer dinner for four when you want something less greasy.

Instructions

Boil the cauliflower in salted water for about 10 minutes, then drain and chop. Boil the chicken breasts in salted water and chop them as well. Slice the onions and cut up the tomatoes.
Mix the sour cream with the beaten eggs and pepper, then stir in the garlic pressed through a garlic press.
Peel the potatoes and slice them thinly. Grease a baking pan with butter and arrange a layer of potatoes on the bottom, followed by the chicken, onions, cauliflower and tomatoes. Pour the sour cream mixture over everything and sprinkle with grated cheese.
Garnish with parsley and bake at 180°C (350°F) for about 30 minutes.
Tip: The raw potatoes on the bottom take the longest to bake, so pierce them with a knife before serving to check for doneness. If they are still firm, cover the pan with aluminum foil to keep the cheese from getting too dark and leave it in the oven a little longer.
