This whole chicken with a spiced marinade roasts in an oven bag, keeping the meat juicy without basting. Rub the chicken inside and out with salt, pepper, and other spices mixed with oil or softened butter. You can fill the cavity with onion, garlic, lemon, or herbs. The roasting time at 200°C (400°F) depends on the chicken's weight. Cut open the bag for the last half hour to brown the skin. The method is easy enough for beginners and also works well for a holiday lunch.

Instructions
Tip: tap a step to mark it as done.
To make the marinade, mix salt, ground black pepper, and other spices to taste with a little oil or softened butter. Rub the marinade thoroughly over the chicken, inside and out.
Tip: Fill the chicken cavity with onion, garlic, lemon, vegetables, or fresh herbs to flavor the meat as it roasts.
Let the seasoned chicken rest in the refrigerator for a few minutes to allow the flavors to blend, or place it straight into an oven roasting bag. Close the bag with the included tie and use a sharp knife to make several holes for steam to escape.
Place the bagged chicken on a baking sheet and roast at 200°C (400°F). Allow 1 hour per kilogram of chicken, so a 2 kg chicken will take 2 hours. For the last half hour, cut open the bag, pull it back, and let the chicken brown.
Tip: Check for doneness by piercing the thigh near the joint; the juices must run clear. Let the roasted chicken rest for 10 minutes before carving to keep the meat juicy.
